tricoloured,triple flavoured rice n vermicelli pudding!!

ingredients required:
par boiled rice
vermicelli
sugar
ghee/clarified butter
coconut dessicated
elaiechi[cardamom] powder
lemon zest
lemon juice
turmuric
kesar/saffron
raisins 
almonds
pistachio[optional]
How to make
Cook rice in 2 parts
Adding coconut ,sugar,ghee to first
Adding lemonzest,turmeric ,suger and ghee  to second[add lemon juice after cooked]
Keep aside
Cook vermicelli with saffron,ghee,cardamom,sugar
Now set the three preperations in small bowls in a layered manner as one layer of each colour
Keep aside to set for a while
Now put it upside down on a clean plate and ur tri colored triple flavoured pudding is ready!

here are some of the basic vegetable ingredients that are used in vegetarian cooking...with some added description to familiarize you guys with their food properties and use!! 
fresh lemons and ginger
[used in Indian, Thai, Chinese cooking specially,lemon zest made from the outer peel of these juicy yellow lemons adds a tangy aroma n flavor to the food...!!ginger is also known for its medicinal properties especially for cough and cold and sour throat ,ginger juice with honey is very soothing]

maize/corn
healthy source of fiber,is used in many parts of the world as staple food
high glycemic index makes it an ideal choice for a morning breakfast cereal as in cornflakes to a an evening snack as a roasted spicy corn on cob on a cold winter evening!...can be eaten in many forms like raw as sweet corn in flavored and unflavored versions,in salads and soups....or dried and roasted as pop corn during a fun movie...

rice
also called chawal in hindi
one of the worlds most staple food to go with most vegetables,gravies,curries etc...eaten as boiled,fried, flavored, flaked,puffed versions.....rice is a must in most food cultures!


cucumber[kheera in hindi]
high source of fiber,full of water,neutral in taste,this veggie is a Favorite with the people on a diet
eaten whole or as a part of  salads,soups,veggies or other indigenous versions...very healthy for the digestive system and skin for sun protection and anti blemish!!

brown sugar
a much healthier version of the regular refined white sugar,its finer than white sugar so mixes faster,lot more sweeter  and has less calorific value...its basically made from raw  sugarcane juice and tastes almost similer.

used in milk shakes,fruit salda,desserts,mango juice,or raw as chutney or pickle...

high source of iron,fibre and  beta carotene
its a very healthy sweet fruit consumed as smoothies,milkshakes,dessert,puddings,fruit salads etc.

very high in fibre,its a dieter's delight!

how to make gujias [ sweet stuffed dumplings]


Ingredients Required:
• Flour
• Sugar
• Khoya
• Cooking oil
• Dry fruits—raisins, almonds, pistachios and cashews
• Water



Procedure of gujhiyas:-

Initially, ingredients like flour or ‘maida’ and oil are properly mixed. With the help of little water, it is kneaded well to make dough. It is then properly covered with wet cloth and kept aside for sometime.
The ‘khoya’ is taken in another bowl and deep-fried in oil till it is light brown. Later, it is mixed with sugar. Dry fruits like raisins, almonds, pistachios and cashews are added in to this mixture. Allow it to cool for sometime.
While the khoya cools down, little round flat chapattis are prepared from the dough. These round chapattis are stuffed with the khoya and dry fruit mixture. Now fold the chapattis so that the sides are sealed and ensure that the khoya is wrapped into it. Then, on a very low flame, deep-fry these  gujhias until deep brown. Place on tissue paper so that it soaks excess oil and serve hot...

how to make easy sweet saffron rice !!


Ingredients Required:

Basmati rice
Strands of saffron that r crushed
Sugar/honey
Chopped pistachios, raisins and almonds
Cardamom or ‘ilaichi’ powder
Piece of cinnamon/ground powder
few cloves
Pure ghee/butter/oil [ghee tastes the best!!]
Saffron color dissolved in water.[optional]



Procedure:-
First, you will have to take the basmati rice and boil it in plenty of water. Since this is a sweet dish, you should not add salt to the water. Keep checking rice, whether it cooked or not. When it is just about to get fully cooked, remove from flame and drain water. Allow it to cool for sometime.
To this drained rice, add sugar, saffron color, crushed saffron and cardamom. Next, in a pan, heat ghee and add cloves, dry fruits and cinnamon piece to it. A little later add rice to it. Cook for a couple of minutes and turn off the flame. When the water has fully evaporated, your sweet dish is ready to be served. 

Tip:
You should always serve sweet kesar rice hot and can also further garnish it with almonds, cashews and raisins.
